As we rapidly approach the infamous "summer solstice" that marks our entrance into Summer, I would like to end the ethereal season of Spring with a banger! This recipe is perfect to eat outside in your garden, where the flower's perfume makes you feel dazed, the sun's rays caress your skin, and birds' sweet chirps serenade your ears.


If you're running out of breakfast ideas or aren't a particular fan of foods that predominantly use animal products, this is also the recipe just for you.

The Recipe 🍳



Name: Spring Vegetable Frittata

Ingredients:


  • 8 large eggs

  • 1/2 cup milk (or a dairy-free alternative)

  • Salt and pepper, to taste

  • 1 tablespoon olive oil

  • 1 small red onion, thinly sliced

  • 1 bell pepper (any color), diced

  • 1 cup cherry tomatoes, halved

  • 1 cup asparagus, trimmed and cut into 1-inch pieces

  • 1 cup baby spinach

  • 1/2 cup feta cheese, crumbled (optional)

  • Fresh herbs (such as parsley or chives), chopped, for garnish

  • Slice 1 avocado


 

Instructions:


1. Preheat your oven to 375°F (190°C).


2. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined. Set aside.


3. Heat olive oil in an oven-safe skillet over medium heat. Add the sliced red onion and cook until softened.


4. Add the bell pepper, cherry tomatoes, asparagus, and avocado to the skillet. Cook for a few minutes until the vegetables are slightly tender but still vibrant.


5. Stir in the baby spinach and cook until it wilts.


6. Pour the egg mixture evenly over the vegetables in the skillet. Allow the eggs to set around the edges.


7. Sprinkle crumbled feta cheese over the top, if using.


8. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the frittata is set in the middle and slightly golden on top.


9. Remove from the oven and let it cool for a few minutes. Garnish with fresh herbs.


10. Slice and serve!

 

My Reaction To The Frittata




Not only is it pretty enough for you to take pictures of it and post it, but the contrast between the saltiness of the egg and the freshness of the vegetables not only makes you feel satisfied but also happy with your choice of eating healthy. I can see myself eating this on a picnic blanket while watching the sunset. đŸ§ș What can I say? I'm a foodie who loves to romanticize the times in which I can eat foods I enjoy and don't feel guilty about eating, haha. 😆
